I need to find out what colors are used in a document (either the list of colors, or just color models such as RGB, CMYK, etc). How can I do this quickly without selecting each object and inspecting its fill/outline?

When you create a palette from a document it lists all of the colors in this palette which are used. You could also create Color Styles which will do a similar thing.
